It is believed that the tradition of tapas began when King Alfonso XIII recovered from an illness by drinking wine and eating small tasting plates between naps. Sydneysiders have taken this wine and small plate movement to extremes with a myriad of tapas bars popping up all over the city. But can these wine and dine joints make patatas bravas like mamma does? Can they turn the finest local produce into dishes that family and friends salivate over and share? Alegrias chef Javier Sevilla can. In fact, he’s transported his favourite home-style recipes to a contemporary restaurant in the heart of Balmain. Plus, there’s sangria. And cocktails. And paella and Spanish wine and oh so much more!
